These bite-sized delights bring joy to iftar gatherings. In part one of this recipe, I will share with you how to make quick and easy homemade pizza bases, along with a delectable pizza sauce that will elevate your cocktail pizzas to new heights. In the second part of this recipe, I share two of my family’s toppings to inspire your culinary creativity and tantalise your tastebuds!
For The Pizza Bases:
2 C (500 ml) cake flour (all-purpose or plain flour)
2 tsp (10 ml) baking powder
¼ tsp (1.25 ml) salt
50 g or 3 tbsp (45 ml) butter, melted
– 1 egg, beaten
¾ C (180 ml) plain or Greek yogurt
For The Pizza Sauce:
1 C (250 ml) canned passata or plum Italian tomatoes
1 Tbsp (15 ml) tomato sauce or ketchup
1 garlic clove, crushed
½ Tbsp (7.5 ml) dried Italian herbs or dried oregano or thyme
½ tsp (2.5 ml) freshly ground black pepper
¼ tsp (1.25 ml) salt
Preparing The Dough
- In the bowl of a stand mixer, combine the flour, baking powder, salt, and butter.
- Use a hook or paddle attachment and set the mixer to medium speed.
- Mix for about 30 seconds until the butter is incorporated.
- Add the yogurt and beaten egg and mix for 1 minute until a pliable dough is formed.
- Shape the dough into a ball, place it back into the mixing bowl, cover, and set aside in the fridge for 10 minutes.
Preparing The Pizza Sauce
- In a small to medium bowl, combine all the pizza sauce ingredients.
- Mix well, cover, and set aside.
Shaping & Preparing The Bases
- Line a baking sheet with parchment paper and preheat the oven to 180 degrees Celsius.
- Divide the dough into medium-sized or golf ball sized balls. Aim for around 37 to 40 grams each.
- Flatten each dough ball to resemble a pizza base and place them on the baking sheet.
- Spread a teaspoon of the pizza sauce onto each base.
- Bake in the oven 12 minutes.
- Once the bases are baked, remove them from the oven and get ready to add your favorite toppings.
- Return the topped bases to the oven for a few more minutes until the cheese is melted and toppings are nicely cooked.
Freezing Bases:
– These bases can also be stored in a sealed container and frozen for up to 3 months.
