Whenever I crave comfort food, there’s one dish that always brings me back home: my late mom’s beloved Gesmore Soeseis, or “Braised Sausage.” With a rich tomato and onion-based sauce, a hint of green chili, and perfectly tender potatoes, this dish is pure nostalgia on a plate. FOR THE BRAISED SAUSAGE
2 Tbsp (30ml) sunflower or canola oil
2 large onions, finely chopped
1 ripe tomato, roughly chopped
1 fresh green chili, split lengthways
1 clove of garlic, crush – optional
1 tsp (5 ml) white sugar
Salt, to taste
2 C (500 ml) water
1/2 Tbsp (7.5 ml) tomato paste
3-4 medium-sized potatoes, peeled and quartered
1 kg sausage, cut into thumb-sized pieces
1/2 tsp (2.5 ml) freshly ground black pepper
PREPARING THE BRAISED SAUSAGE
1. Sauté the Onions: Heat the oil in a large saucepan over medium-high heat. Add the chopped onions and sauté for 5-7 minutes until they’re golden.
2. Add Flavour: Stir in the chopped tomato, green chili, garlic (optional), sugar, and salt. Reduce heat to medium and cook for another 15 minutes, stirring occasionally.
3. Build the Sauce: When the mixture is about to catch, add 1/4 cup (60ml) of water and cook for an additional 5 – 7 minutes.
4. Combine Ingredients: Add 1/2 a cup (125ml) of water, tomato paste, and quartered potatoes. Stir well, cover, and cook for about 10 minutes until the sauce thickens.
5. Add the Sausages: Place the sausages on top of the potatoes without stirring. Cover and increase the heat to high for 5 minutes.
6. Simmer: Pour in the remaining water, adjust the heat to medium, and let it cook for about 20 minutes.
7. Final Touch: Sprinkle freshly ground black pepper, fold everything together. Add a splash of water if you prefer a thinner consistency.
